Easter is almost here, why not surprise everyone by serving this beef sausage stew.

Ingredients

Beef Stock

Fresh thyme

Boiling water

Vegetable oil

Beef sausages

Black pepper ground

2 onions

3 carrots

2 red peppers

2 cloves garlic

Red chilli flakes

Tomato paste

Parsley

1 tin chopped tomatoes

Preparation

Step 1: Heat the oil in a casserole dish, over medium-high heat and brown the sausages.

Remove the sausages and set aside.

Step 2: Add the onions, carrots and red pepper to the dish and cook over medium heat for 5 minutes.

Step 3: Add the garlic and cook for a further 2 minutes. Add the tomato paste, thyme, chilli flakes and chopped parsley and cook through for 2-3 minutes.

Step 4: Stir in the water, crumbled bouillon cubes and tomatoes and bring to a simmer.

Step 5: Return the sausages to the pot, and cover with a lid. Simmer for 30 mins.
